How can I rename the columns and/or names in the chart legend?

You can rename the columns and/or names in the chart legend by changing the label of your Measure or Dimension in the Select Data stage.

If you are using SQL Mode you can alias your columns using using the AS statement.

Another option is using the Rename Columns step in the Data Pipeline.
